Oisin Davis of Great Irish Beverages introduces us to another original creation from his recipe book.

Oisin says:

If like me you got caught up in a flurry of November snow today, then you'll be acutely aware that Autumn is totally gonzo and we are officially in the throes of winter. This is the time of the year when I either dial up the temperature of my drinks or dial up the spice levels.

But seeing as we may well be drinking hot drinks for a while as the Irish winter pretty much runs til late April, I figured I'd ease myself and the lads in slowly with an easy to make, but seasonal punch. It's a party sized option, so why not give it a go with a gang of your friends this weekend?

Cocktail -  Barry’s Tea Punch

Ingredients:

  • 1 bottle of Jameson
  • 1/4 bottle of dry white wine
  • 500 ml strongly brewed Barry's Tea
  • 2 litres of pressed apple juice
  • 1 jar of Irish honey
  • 25 g of fresh ginger
  • Zest and juice of four lemons
  • 1 teaspoon of cloves
  • 1 teaspoon of green cardamom
  • 1 teaspoon of cinnamon
  • 6 star anise

Method:

Pour half the apple juice in a pot along with the ginger, lemon zest and all the spices. Put the lid on it and bring it to the boil, let it simmer for 30 minutes. Then pour in the tea, honey and lemon juice followed by the whiskey and wine. Strain out all solids with a baking sieve. Pour it all into a big punch bowl and garnish with some apple & lemon slices and freshly grated nutmeg. Drop some ice into each glass and ladle in the punch.
