Each Thursday on the Tom Dunne Show Oisin Davis of the Damson Diner (South William St, Dublin 2) recreates a famous cocktail from the movies. 

This week it is the Mai Tai, a classic 1960s cocktail from the Elvis Presley film, 'Blue Hawaii'. 

Oisin's version of a Mai Tai is more like the original that was invented by Trader Vic Borgeron in the 1930's. He prefers to use Cuban Rum as it's got more depth. There are many bastardizations of this drink around that call for ingredients like grenadine or pineapple juice but steer well clear of those!

INGREDIENTS:

60 ml Havana Club 7 year old rum
10 ml freshly squeezed lime juice
5 ml Cointreau
10 ml Orgeat (this is an almond syrup)
10 ml golden sugar syrup

METHOD:

Shake all the ingredients with some crushed ice in a shaker for a good 15 seconds or so.

Empty the whole lot into a long glass.

Garnish with a sprig of mint and 1/2 a lime husk.
