Ambition is the brand for Giovanni Vsicardi and Brian Deery, owners of wine bar-basment Bagots Hutton.

"Why did we choose Ormond Quay?" Giovanni says in the new premises at 6 Upper Ormond Quay. "Because we wanted it to become a destination."

After transforming their space on South William Street into a classic New York-style basement that's the place to be for wining and dining, the owners are confident in their new choice of venue. 

Featuring bright yellow chesterfield sofas, copper wallpaper and authentic Italian pizza ovens flown in from Naples, it distinguishes itself as the bar that caters for everyone - wine connoisseurs and pizza fans alike. The venue features a regal breakfast room, with a charcuterie bar next door and a sit-down fine-dining restaurant with booths seating 10 downstairs.

"Our clientele is in their mid 20s to late 50s - we have such a big clientele because we're associated with wines," Gio says. "We've gone with a very new art look while keeping the Georgian detailing in the building," noting the original 18th century chandelier in the main room.

Their menus look set to expand in the New Year, but you can expect much of the same goodness currently served at their South William Street haunt - anti-pasta, pizzas and sharing boards. Brunch will be served Saturday and Sunday in the front room. Live entertainment in the main room will feature jazz music, cabaret artists and DJs and will be played out over an impressive sound system. 

"The only place in Ireland that has the same music system is 3Arena," he says.

Through the economic downturn, they've kept busy, and they put that down to their niche of wines - Bagots Hutton However, the pair are moving with a changing market, branching into craft beers.

"The most popular craft beer we sell is an Italian craft beer called Moretti. Prosecco remains our most popular wine," he laughs. "We sell rivers of Prosecco."

They're opening at the busiest time of year, with Christmas party season in full swing. The new venue will allow for larger bookings - something they could not accommodate for in their South William Street premises.

They're eyeing up two other venues in Dublin provisionally, but want to firmly establish themselves here before confirming their next move.

Bagots Hutton at 6 Ormond Quay Upper opens on November 24th.
