Combel la Serre Carbo Malbec
This is a very different take on Malbec which is becoming one of Ireland’s most popular grape varieties. It is made in the same way as the Beaujolais above with a technique called carbonic maceration which tends to give lighter juicier styles of wine. This is a young couple Sophie and Julien Ilbert who took over their family estate in Cahors in 2007 and have been farming biodynamically since then.
