When the moon hits the sky like a big pizza pie... This is a really quick pizza to make for lunch.
By using self-raising flour in the dough, the base will be soft and flaky with a biscuit feel. If you cut this into small soldier-like strips it would make a perfect finger food for little mouths.
Also, why not get the older kids involved by helping - easy pizza-y.
Ingredients: (the shortest list of all time)
- 1 and a half cups of self-raising flour (I use regular cups)
- Half tablespoon of salt
- A third cup of warm water
- 3 table spoons of olive oil
- 3 tablespoons passata (sieved tomato)
- Teaspoon tomato puree
- A handful grated cheese
- Teaspoon of basil
- Teaspoon of oregano
- Whatever toppings you have
Method:
- Pre-heat oven to 180 C gas mark 4. Spray an oven-proof tray with olive oil - no fancy pizza pans needed.
- Put the flour and salt into a bowl. Make a well in the middle (a hole) add the water and oil and using a spoon mix from the middle out.
- Put the dough on the centre of the oven-proof tray and spread to the edges with your fingers.
- Put the dish in the oven, centre rack and bake for 15 mins. Until the top has formed a crust.
- Take from the oven and add a spread of passata, tomato puree, cheese, herbs and whatever toppings you like (we love ham and pineapple).
- Bake for another 10 mins until cheese is melted and toppings are cooked.
Serve for a quick lunch or perfect for a picnic - and what's better, this is a pizza that you know exactly what's gone in to it!
