While mozzarella might not be the most flavoursome of cheeses, when it comes to producing the balls, it turns out the process is a feast for the eyes. The whole process is strangely hypnotic, particularly in this gorgeous video depicting how an artisanal variety is made by hand in Italy.

Shot in Caseficio Torricelle in Paestum, Italy, the mozzarella capital of the world. Michele takes us through the delicate and detailed process of making artisinal mozzarella, starting at 2 in the morning. This project was commissioned by Whiteout’s Alessandro Salerno.
