Cocktails on the Tom Dunne Show: Wild Blackwater Fizz

Using Wild Hedgerow Gin infused with wild fruits from Waterford...

Oisin Davis of Great Irish Beverages is back with another tasty treat from his recipe book.

Oisin says:


Like a moth to a flame, I'm always somehow attracted to new Irish liquors. Or else they have a cunning way of finding me, but either way I'm always turbo excited when a new Irish spirit arrives on my doorstep. Especially when they taste as nice as the latest offering from the Blackwater Distillery in Waterford - the Wild Hedgerow Gin. 

They took their beautifully crafted gin and infused it wild fruits from their area such as damsons, sloes, crabapples and blackberries. It's then lightly sweetened to counteract some of the more sour notes of the fruits. You can sip it over some ice or if you're so inclined, mix some into a nice wee seasonal cocktail like this one....

Cocktail -  Wild Blackwater Fizz


  • 50 ml Wild Hedgerow Gin 
  • 10 ml Highbank Orchard Apple Syrup, diluted with 50% water
  • 10 ml lemon juice
  • 2 dashes of Jameson Sloe Bitters or Angostura
  • egg white 
  • 100 ml Pear Cider 


Place all ingredients except the pear cider in a shaker with ice. Seal it and shake hard for twenty seconds. Strain into wine glass and top up with the pear cider.
