Still holding strong on your New Year's Resolutions? Tempted by all those tasty treats? Fear not... these Crunchy Nut Bars are both nutritious and delicious. 

What you'll need:

  • 2 cups of pecans
  • 1/2 cup flaxseeds
  • 1/4 cup chia seeds
  • 1/4 cup desiccated cocunut
  • 1/2 cup melted coconut oil
  • 1/2 cup agave nectar (or maple syrup)

Optional Toppings:

  • Pumpkin seeds
  • Sunflower seeds
  • Goji Berries
  • Bee Pollen

Method:

  1. In a mixer combine the pecans, flaxseeds, chia seeds & desiccated coconut.
  2. Add in the melted coconut oil and agave and mix thoroughly until combined.
  3. Place the mixture in a baking dish and smooth out until flat.
  4. Sprinkle the bee pollen, sunflower seeds, goji berries and pumpkin seeds on top.
  5. Place in your freezer for about an hour, before removing and slicing into squares!

Top Tip: Serve with a cup of green tea to beat the afternoon slump!
